Spiced Oatmeal Everything Cookies
I have a new favorite cookie. It's this one. This perfect cookie is nicely caramelized on the outside while remaining very soft and chewy inside. It is made with organic oats, organic flour, and robust organic molasses. Spiced with ginger, cinnamon, nutmeg, and cloves, it is studded with organic dark chocolate chips, organic coconut, roasted pepitas, and VT Cranberry Co. dried cranberries. Think of it as a very grown-up version of a monster cookie.
Admittedly I do not have much of a sweet tooth (actually, most pastry professionals that I know don't often crave their own handiwork), and strive to never bake anything that is overly sweet. I'm a big fan of chocolate and ginger together (it's just so satisfyingly sophisticated), and love lots of texture in my baked goods. This cookie checks all of my boxes, and I ate THREE in the process of taking this photo. It looks unassuming, but is actually very exciting.
These are packed fresh in airtight bags. Store them at room temperature for up to a week or in the freezer for three months.
