Great for tough dry conditions, but happy in good soil too! I love Eryngium plants. These second year plants will be in a hurry to form a nice clump and start throwing out rigid blue stems of thistle like flowers. They're only a little prickly, not unlike myself.
In the cutting garden, cut them when they just turn blue. If you keep the stems cut they will re-flower off and on all season. Eryngium also dries well.
