The sweet potatoes with coconut milk are much lighter than the traditional buttery mashed potatoes you find on shepherds pie. And the spiced veggie-heavy pork mixture with fresh ginger is delightful any time of year. I've been making this shepherd's pie for years, and it is a favorite in our house.
One 7" round aluminum casserole pan weighing approximately 1.5Lb. This is a good amount for 3-4 light lunch servings or 2 generous dinner portions. Do note that the photo makes the potato layer look much thicker than it is. The pan is mostly filled with the scrumptious curried pork mixture, with a thin layer of whipped sweet potato artfully swirled on top.
