A fresh take on the classic Provençal dish! Our style at Kingdom Direct: We roast the vegetables individually to enhance flavor and texture. That's before they’re incorporated into a rich aromatic tomato sauce with garlic and caramelized onion, along with fresh basil, red wine, and capers.
Made with organic eggplant and squash from Pete's Greens, and organic tomatoes, our ratatouille is served atop celeriac purée and alongside spinach salad. We pepper fresh greens with tart dried cherries, toasted walnuts, Jasper Hill Farm Bayley Hazen Blue cheese, and French vinaigrette.
I promise that I will not have a cartoon rat under my chef’s hat while I prepare this meal.
