This weekly dinner has this Mexican staple at center: Empanadas are made with golden buttery pastry filled with Snug Valley Farm beef and pork, raisins, olives, and spices. On the side, we have a garlicky herbaceous chimichurri, beet salad with pepitas and chévre, and a simple tomato and onion salad.
