This week, I tried to create the most autumnal dinner menu imaginable, by updating an Italian classic with a quintessentially fall flavor profile.
You’re going to love this comforting butternut lasagna.


Layers of roasted butternut squash, ricotta, & parmesan combine with browned butter bechamel, rosemary, sage, sauteed spinach and garlic, thinly sliced apple, and toasted walnuts to create this luxurious lasagna. It is served with a crisp kale salad topped with red onion, cranberries, shaved parmesan, and apple cider vinaigrette. I recommend pairing it with big sweaters, picnic baskets, and wool blankets.

And for dessert, pumpkin cheesecake parfaits!  with nutmeg and cardamom sits atop a layer of housemade graham cracker crumbs, and is topped with salted caramel and candied pecans.
