52 Dinners - Week 33: In-Laws & Lasagna
I’m fortunate to have a great relationship with my in-laws.
Both Bailey and I were raised in conservative Christian households. Both of our dads were pastors, actually, so it’s extra special as queer people to have the love and support of our religious families.
Ken and Sandy spend their time bopping between Florida, Kentucky, and New Hampshire, so we don’t get to see them as often as we’d like. But last night they made it up to the farm for dinner.
We started with a simple caprese salad with 1000 Stone Farm tomatoes.
Logs of fresh mozzarella were BOGO when I was at the grocery store the other day, so I stocked up.
I threw together a white sauce lasagna with our own sausage, arugula, squash and zucchini, herbs, and kale, along with lots of garlic and cheese.
For dessert I made a triple berry pie using local strawberries that I stuck in the freezer last month, Adam's Berry Farm raspberries, and wild black raspberries from our property. I gave it very little time to cool, so it was basically a delicious warm berry soup in-between layers of flaky buttery crust, served with a scoop of Strafford Organic Creamery sweet cream ice cream. The solution? Serve it with a spoon.
