52 Dinners - Week 23: Ribs & Rosé
This lovely May week, we had a Ribs & Rosé party for about 45 of our closest friends and neighbors.
It was such a wonderful evening, the perfect way to greet the arrival or warmer weather.
We had 30+ pounds of pork spare ribs from last fall’s pig harvest, so this was a great opportunity to feed a crowd, free up some freezer space, and create an alliterative party title.
The ribs got a dry rub about 32 hours before being baked at 250º for three hours. They were fall-off-the-bone tender when I slathered them in a zippy homemade BBQ sauce and threw them on the grill for a few minutes to char up. Several guests told me that they were the best ribs they’d ever had, so that was nice to hear.
I served them with a big green salad, some super deluxe four-cheese mac & cheese (that cheese is on full-sized sheet pans in the photo above!), and spicy maple bacon baked beans.
Guests were asked to bring a bottle of something pink for the bar!
Everyone clapped when I brought out dessert: profiteroles filled with raspberry rosé ice cream, topped with dark chocolate ganache, roasted pistachios, and sea salt.
